Red Velvet Cupcakes Recipe {using DC cupcakes secret ingredient}

Soooo, I was recently watching a rerun of DC Cupcakes and all I can remember was how good their red velvet cupcakes looked! In addition my husband had recently told me that one of his favorite cakes was red velvet....on that note, I had no idea he liked red velvet cake (and we have been married for 10 years...), anyways I was searching online for their recipe and of course I never found it. During that rerun one of the sisters said that their secret ingredient for their red velvet cupcake was: apple cider vinegar! So I found 2 recipes online combined them and tweak them a little... btw my 4 and 5 year old helped me make this recipe (excuse the mess)...that's how easy it is to make it!

Ingredients for cupcakes: (NO mixer needed)

Dry Ingredients:
2.5 cups of all purpose flour
1.5 cups of sugar
1 tsp of baking soda
1 tsp of salt
1 tsp of cocoa powder

Wet ingredients:
1.5 cups of vegetable oil
1 cup of buttermilk
2 large eggs
1 bottle (1oz) of red food coloring
1 tsp of APPLE CIDER VINEGAR
1 tsp of Vanilla extract

STEP 1: In a medium bowl mix all dry ingredients but pass them through the sifter first! (twice if you can...but if you are lazy like me...just once)

Step 2: In a larger bowl mix all wet ingredients and whisk them well...it is going to turn really red...that's a good thing!

Step 3: Little by little add the dry mixture to the wet mixture until well combined...this is how it will look like...

Step 4: Line 2 muffin pans just like this...and use an ice cream scoop to fill them up

Step 5: Bake for about 20 min at 350 degrees. I normally take them out a little before they are done...the husband likes them a little gooey. So when my toothpick is a little bit wet still, according to me (or to my husband, that is!) they are done! but you might want to bake them a little longer until the toothpick cames out clean...

Cream Cheese frosting (Mixer needed!)
1 lb of cream cheese
2 sticks of butter
1 tsp vanilla extract
4 cups of sifted powder sugar

Mix the butter until very smooth and no lumps. Add the cream cheese and mix well ..no lumps...then slowly add the powder sugar until it is well incorporated then mix at higher speed until flufy. At the end add the vanilla and mix. Frost your cupcakes with a nife, or with a pipe OR by putting the frosting in a ziploc bag and cutting one of the corners (good luck with that lol - it never works for me).

ENJOY!!!

I just made these cupcakes, and they turned out amazing! They were not dry, and the icing was to die for. However, when I followed the icing recipe for this cupcake recipe, I had a bunch of left over icing, so I would recommend thinking about cutting down the icing recipe. But over all phenomenal!

Should I sift the flour before measuring or after?

@Rocio from {Sweetaprils}, it says baking soda...do youmean baking powder? Or did you actually use soda, like Arm & Hammer? Lol. Sorry I know this probably sounds like a stupid question, I've just never heard of using actual baking soda in a recipe. I really want to try these for my husband's birthday this weekend. Red Velvet is his favorite too & I don't want to mess them up by using the wrong thing! Haha thanks!
