Papa Rellena - Stuffed Potato {Recipe From My Twin's Kitchen}

I was very excited when my twin sister - Ruth - agreed on letting me take pictures of her while she was cooking for my brother. He was in town from Louisiana. He is in the Army. 
My twin is extremely talented when it comes to cooking. Peruvian cooking is her specialty but she can actually cook anything and everything you can imagine. She is so good! 

Here I have a recipe from our beautiful country of Peru. It is called Papa Rellena which it translates to Stuffed Potato. They are really easy to make. 





THE INGREDIENTS:


5 lbs bag of Idaho Potatoes
2.5 lbs of ground chuck
10 eggs
1 red onion
2 cloves of garlic
2 boxes of raisins
1/2 tspn Cumin
1 tspn and a little more of Accent (optional but it helps with the flavor)
2 tbsps of Paprika
2 tbsps of Vinegar
Olive Oil
Salt and Pepper to taste


Wash and peel the potatoes. Cut them in 1" cubes.



Steam the potatoes in a double boiler. Add salt to the water! DO NOT OVER COOK. Usually they will take between 15 to 20 min to cook. 

Hard boil 4 eggs only (we did a few extras but no need to do that) and when done slice them into 8 pieces each.

Dice the red onion.

and the Gawlic....lol

Add oil to the pan (go twice around the pan), add the onions and a pinch of salt and cook until tender then add the gawlic...;}

While that is cooking place the raisins in hot water to soften.

Once the garlic is almost cooked add your spices (Cumin, Paprika, Salt, Pepper, Accent) and cook for a minute or two.

Add the meet...(my sister is such a good meet-grabber, isn't she?)

Mix well and on cook until brown. 

Add the secret ingredient Apple Cider Vinegar OH! and the raisins too! (drained) and check your flavorsssss... add more seasoning to taste.

Once the potatoes are done, place them in a potato masher


Season the potatoes with salt and pepper and a little accent to taste. Be careful! They will be HOT!!

NOW ready to assemble! Get your potatoes, meet, eggs and  flour (season the flour with salt, pepper and accent)

Before we start make sure to cover your hands in flour to avoid the potato from sticking to your hands. Then grab enough potato, like a baseball size....and place it on the center of your palm

then, flatten it down just like the picture below..if your hands get sticky just add more flour

Add a spoonful of meet to the center

add your little egg

with both hands bring the ends together to close.  FYI you will have extra meet left over. It's ok. We usually make Empanadas with the rest...Tutorial coming soon!

Put more flour on your hands and over the potato. Patch any holes and form the shape of an actual potato.

Make them all!!! You will end up having like 25 Stuffed Potatoes!!! or Papas Rellenas!

Ready to FRY!!! First step is to cover the potato with MORE flour....

Whisk the other 4 eggs and dip the potato into the egg mixture. Remove the excess.

and FRY them in hot oil. I am sure you can use a deep fryer but what we do works just great.

Rotate them until all sides are GOLDEN brown....sizzling - sizzling 

and this is how this beauties will look like at the end. We (ok, my twin) made 25 of them!

They were all gone...in 60 seconds... (literally)!
